Indian Spiced Nettle Soup

Indian Spiced Stinging Nettle Soup


Ingredients:

1/4 cup of olive oil

2 brown onion, diced

4 cloves of garlic, minced

2 tsp of cumin

2 tsp garam masala

1 tsp turmeric

1/2 tsp mustard seed

1 cup of red lentils

5 cups of stock

6 cups of washed stinging nettle leaves

1 tsp of salt, to taste

1/4 cup cilantro


Heat the oil in the bottom of a soup pot. Saute the onion until lightly browned.

Add the garlic and all of the spices. Fry for 1-2 minutes, until fragrant.

Next, add the lentils, stock, and nettle. Simmer until the lentils are cooked, about 15 minutes.

Add the salt to taste.

Serve with naan bread and a dollop of yogurt and a sprinkle of cilantro.


Notes: Garam masala can be quite hot. It's fine to leave it out for a not-so-spicy soup.
